| Vegetarian French Recipes
France is renowned for its cuisine, but much of it is meat-based. Here is a
collection of vegetarian French recipes, including some that are actually
vegetarian and others which have been adapted. There are also a few recipes with
the word "French" in their names, even though they aren't necessarily
French.
Aïoli
If you've never tasted this garlicky mayonnaise, you're in for a real treat.
Artichoke Soup
This garlicky artichoke soup is very easy to make.
Bastille Day Fruit Salad Blue, white, and red fruit to celebrate the French national holiday.
Béchamel Sauce
This simple white sauce can be used plain, or as the base for herbs, cheese,
sun-dried tomatoes, nuts, or other additions. It can easily be made vegan using the
alternate ingredients listed.
"Beef" bourguignon
Although time-consuming, this is an easy and very delicious recipe for mock beef
bourguignon made with either seitan or tempeh.
Beet Salad
I hated beets when I was a kid, but then as an adult I discovered that they
don't come from cans. Fresh beets are packed with flavor, and this French
beet salad couldn't be easier to make.
Chapelure
Bread crumbs, or chapelure, as they're called in French, are available at the
store, but there's really no need to buy them when you can quickly, easily, and
cheaply make them yourself.
Chèvre (Goat Cheese) Salad
The contrast between the cool lettuce and the warm goat cheese and toast
makes this a real treat in the summer.
Chocolate Mousse
This has got to be one of the easiest and most delicious desserts that exists.
Many chocolate mousse recipes call for gelatin; not this one!
Crêpes
Crêpes are thin pancakes that can be wrapped around just about anything to
turn it into an elegant meal, or just folded and topped with something yummy.
Try some of these fillings and toppings, or experiment to invent your own.

Crudités
A platter of crudités typically consists one or more types of raw vegetables served with one or more dips. These can be served as an appetizer, at a buffet, in place of a salad - the sky is the limit. Here

Although I call these French fries, it's a bit of a misnomer, as they are
roasted rather than fried. They're very similar to the fried ones and every bit
as good!
French Onion Soup
Traditional French onion soup is made with beef broth, but this vegetarian version is so
flavorful that meat-eaters will never know the difference!
French Toast
This is the recipe for the best French toast I've ever had - a variation on
the house recipe at a little café I used to work at in Illinois. I hope you
enjoy it!
Frozen Anisette Soufflé
Frozen soufflés make a nice, light dessert after a rich
meal. This recipe calls for anise-flavored liqueur, but you could use
another flavor like orange or hazelnut instead.
Leek Gratin
Serve leeks baked with
several cheeses and a bit of cream over flavorful pasta or rice for a rich and delicious treat.
Lemon Mousse
Light and tangy; perfect after a heavy, rich, or spicy meal.
Lentil Salad Like all beans and legumes, lentils are an excellent source of protein. Unlike the others, lentils do not need to be soaked before cooking. For an easy, healthy, quick meal, try this lentil salad recipe with onions and rosemary. Omelette Omelettes (or omelets) are quick, easy, and very versatile. They're great at any time of the day, especially breakfast or brunch. Following these instructions to the letter will leave you with a very light, fluffy omelette that will melt in your mouth. Pâté
If you miss the taste of chopped liver, give this vegetarian pâté a try. You
might even be able to fool your non-veggie friends. Pissaladière Pissaladière is an onion pizza or onion tart from Provence. Traditionally made with anchovies, this vegetarian pissaladière is spiced up with tapenade instead.
Pistou Sauce
Pistou is the French version of pesto - the only differences are that there are no pine nuts and the Parmesan cheese is commonly replaced with coarse salt, making it safe for vegans.
Provençal Tomatoes
These stuffed tomatoes from southern France are delicious served with soup,
pasta, or rice dishes. Ratatouille The perfect recipe to enjoy fresh summer vegetables and herbs; it can be served half a dozen different ways. Salade niçoise Chickpeas or tofu can be used in place of the traditional tuna fish or anchovies for this vegetarian salade niçoise recipe.
Strawberry Sorbet
When it's hot
out, a cool strawberry sorbet really hits the spot. Tapenade - Olive Dip
A typical Mediterranean dip, made mostly of olives and olive oil. Traditional recipes include anchovies, but there is absolutely no need for them here. Vegetable Gratin
I don't know anyone who doesn't love gratins - there's something about the
cheese/bread crumb layer on top that appeals to just about everyone. If this
sounds like you, try this tasty way to use up some leftover vegetables.
Vichyssoise A simple combination of potatoes, onions, and milk that make a deliciously creamy, chilled soup.
Vinaigrette This classic dressing is great on just about any kind of salad.
