Vegetarian and vegan recipes with lentils

Like all beans and legumes, lentils are an excellent source of vegetarian protein. Unlike the others, lentils do not need to be soaked before cooking, so they are quick and easy to prepare – and delicious to boot.

Lentils come in a variety of colors and are found in all kinds of vegetarian recipes, from soups and salads to loaves and lasagnas.

Lentils can be used in place of beans and chickpeas in most recipes.
