| Vegetarian Mock Meat Recipes
Some vegetarians avoid mock meat recipes, while others swear by them. If
you're in the latter category, or if you're just interested in trying some
vegetarian and vegan versions of typical dishes, take a look at these mock meat
and dairy recipes.
BLT
Warm "bacon" contrasts nicely with crisp lettuce and ripe tomato, and
makes a delicious, nutritious vegetarian / vegan sandwich.
"Beef" Bourguignon
Although time-consuming, this is an easy and very delicious recipe for mock beef
bourguignon made with either seitan or tempeh. "Beef" Stew A rich, thick stew made with seitan and lots of good veggies. It's especially tasty served with hot French bread on a cold night.
"Beef" Stroganoff
I just love this pasta dish: a creamy sauce with mushrooms and
chunks of mock meat.
"Cheese" Sauce
Here's an easy and completely vegan recipe to help you deal with your cheese cravings.
"Chicken" Chow Mein
Mock chicken chow mein (made with TVP) doesn't take long to prepare,
but it does require quite a bit of cooking.
"Chicken" Salad
This simple tempeh salad really does resemble chicken salad. It's great in
sandwiches or atop a green salad. Cottage "Cheese" A combination of tofu, herbs, and barley turns into a vegan version of herbed cottage cheese. "Crab" Cakes
Delectable
"crab" cakes made with tempeh and served with sherry sauce.
Cream "Cheese" This vegam cream cheese recipe is perfect on bagels, sandwiches, or anything else that needs a creamy, mildly sweet spread.
"Egg" Salad If you don't want to eat eggs for whatever reason but like the soft texture
and pleasant taste of egg salad, try this tofu version.
Feta "Cheese"
Here is a delicious vegan substitute for feta cheese.
"Lamb" Curry
This mock lamb curry is made with seitan and is spicy and delicious.
"Meat" Loaf This mock meat loaf recipe made with TVP or seitan and served alongside mashed potatoes
is good enough to fool your non-vegetarian, meat- and- potato-loving friends.
Mince"meat"
Make a big batch of vegetarian mincemeat so that you can make a few pies and have some
left over to serve with ice cream, custard, pudding, or crępes. You can also can or
freeze it for later.
New England "Clam" Chowder
This is a rich and
delicious vegetarian alternative to New England clam chowder.
Parmesan "Cheese"
This is a terrific vegan parmesan "cheese" made from nutritional yeast
and toasted sesame seeds.
Pâté
If you miss the taste of chopped liver, give this vegetarian pâté a try. You
might even be able to fool your non-veggie friends.
Scrambled "Eggs" Although scrambled tofu doesn't taste quite like scrambled eggs, it's easy
to make and can take any of the additions and toppings you'd would put in an
omelette.
Seitan Cheese "Steak"
Philadelphia, Pennsylvania is famous for its cheese steak
sandwiches. Now you too can get a taste of this wonderful, hearty
sandwich.
Sour "Cream" Although it doesn't taste exactly like dairy sour cream, this vegan sour cream is just as
delicious and has a lovely, thick
texture.
Soy Milk Making your own soy milk takes a little time, but it's very easy, it will last for a week in the refrigerator, and you don't need to worry about any additives.
Tofu Mayonnaise
Vegans have nothing to fear with this tofu mayonnaise.
Tofu and Tempeh "Sausage"
This is a delicious, protein-packed, vegetarian breakfast side dish.
"Tuna" Salad A vegetarian "tuna" salad made with chickpeas, almonds, and seeds. Tuna fish was the very last meat that I gave up, and while this doesn't take exactly like tuna salad, it's close enough that I don't miss the real thing any more.
Veggie Burgers These vegetarian/vegan burgers, made with lentils, are healthy, low-fat, and
delicious.

Dealing with Meat Eaters
One of the issues faced by many vegetarians is dealing with non-vegetarians.

reason, many meat eaters are unable or unwilling to reciprocate in kind, and
