Fresh tomatoes are one of the best parts of summer, in my opinion. When the tomatoes in my garden are ripe, I make just about all of these dishes featuring tomatoes.
    

Arugula Toasts
These elegant little appetizers are quick and easy to prepare and absolutely delicious.

Avocado Tomato Salad
This is one of the simplest salads ever, and absolutely delicious.

Barley Soup
This barley soup recipe from Sicily is a perfect vegan alternative to chicken soup when you're feeling under the weather.

Bean and Olive Soup
White beans and black olives combine with various herbs and veggies to make a hearty soup.

Bloody Mary
If you crave the spiciness of a bloody mary but don't want the alcohol, try this tasty virgin variation - or make the real thing.

Breakfast Burrito
There's no set recipe for breakfast burritos - you can stuff them with pretty much anything you like. This recipe is for a basic breakfast burrito that you can customize to suit your own tastes.

Calzone
A calzone is a turnover or pocket made with pizza dough and filled with veggies, cheese, and pretty much anything else you put on pizza.

Caprese
This tomato-mozzarella-basil dish is my favorite starter; even though I make it myself regularly, I always order it when I eat out.

Chili
Here's a very easy vegetarian chili recipe - just open some cans, chop a few veggies, and leave it on the stove for a couple of hours.

Eggplant Parmigiana / Parmesan
This classic vegetarian dish is a perfect main course served alongside/atop plain pasta.

Fresh Tomato Sauce
This summery sauce is delicious with pasta or anything else that needs a bit of fresh tomato flavor.

Fried Green Tomatoes

A mixture of finely diced vegetables served with a tart dressing.

Israeli Za'atar Salad
Fresh vegetables tossed with sesame and sumac make a unique salad.

Italian Sandwich
Red, white, and green always make me think of Italy, and mozzarella cheese, tomatoes, and basil are a classic combination.

Italian Tomato Sauce
This is my own Italian tomato sauce recipe which I have been making for years. It works equally well with pasta, lasagna, eggplant parmesan, and pizza recipes.

Jambalaya
This traditional stew from New Orleans is meat-based, but this vegetarian version leaves nothing to be desired.

This easy tomato sauce is great over vegetables, pasta, or pizza.

Lasagne
Vegetarian lasagne is easy and delicious. Here's a variation on the classic red sauce version, with some extra vegetables.

Mincemeat
Make a big batch of vegetarian mincemeat so that you can make a few pies and have some left over to serve with ice cream, custard, pudding, or crêpes. You can also can or freeze it for later.

Minestrone Soup
This classic Italian soup is always vegan, as long as you leave off the parmesan cheese.

Moroccan Tomato Salad
A spicy tomato salad from Morocco that goes well with just about anything from the Middle East and North Africa.

Moussaka
Moussaka is a Greek dish traditionally made with lamb or beef. This vegetarian / vegan moussaka recipe uses portobello mushrooms and seitan instead. A rich and delicious main course.

Niçoise salad
Chickpeas or tofu can be used in place of the traditional tuna fish or anchovies for this vegetarian salade niçoise recipe.

Paella
A Spanish dish traditionally made with meat and shellfish. This flexible veggie version is simpler, but no less delicious.

Pico de Gallo
This spicy tomato sauce is ubiquitous in Mexican restaurants. Serve it with anything that needs a bit of zing.

Pissaladière
Pissaladière is an onion pizza or onion tart from Provence. Traditionally made with anchovies, this vegetarian pissaladière is spiced up with tapenade instead.

Pizza
Making homemade pizza is one of the best and most creative ways of proving that meat is not a necessary part of a human's diet. Also see my pages on pizza dough and toppings.

Pot Pie
This pot pie recipe is better than the TV dinner version for two reasons: it's vegetarian and it's prepared and baked, rather than frozen and microwaved. It's also quick and flexible, so give it a try.

Provençal Tomatoes
These stuffed tomatoes from southern France are delicious served with soup, pasta, or rice dishes.

Ratatouille
The perfect recipe to enjoy fresh summer vegetables and herbs; it can be served half a dozen different ways.
