I love onions - red, yellow, white, green, fresh, sautéed, whatever. Here is a collection of recipes that include onions.
     

Avocado Tomato Salad
This is one of the simplest salads ever, and absolutely delicious.

"Beef" bourguignon
Although time-consuming, this is an easy and very delicious recipe for mock beef bourguignon made with either seitan or tempeh.

"Beef" Stew
A rich, thick stew made with seitan and lots of good veggies. It's especially tasty served with hot French bread on a cold night.

Black Bean Burgers
These black bean veggie burgers from Jamaica are spicy and delicious.

Black Bean Soup
This spicy, garlicky black bean soup is hearty enough to stick to your ribs!

Bread Stuffing
Stuffing doesn't have to be cooked inside a turkey - this vegetarian bread stuffing with apples and walnuts is delicious baked as a casserole.

Breakfast Burrito
There's no set recipe for breakfast burritos - you can stuff them with pretty much anything you like. This recipe is for a basic breakfast burrito that you can customize to suit your own tastes.

Calzone
A calzone is a turnover or pocket made with pizza dough and filled with veggies, cheese, and pretty much anything else you put on pizza.

Carmelized Onions
To carmelize onions, you need to cook them for a long time in a bit of oil or butter. The hardest part of this recipe is waiting for them to finish!

Carrot-Onion Quiche
A quiche makes an easy, satisfying main course. This colorful carrot-onion quiche looks and tastes great with a side of dark green vegetables or salad.

Cashew Chili
Cashew chili is easy, delicious, filling, and vegetarian. What more can you ask for? :-)

Cheese Enchiladas
Cheese enchiladas are very rich and filling, but if you're a cheese lover like me, they're one of the best dishes to get your fix.

Chickpea Mock Tuna Salad
A vegetarian "tuna" salad made with chickpeas, almonds, and seeds. Tuna fish was the very last meat that I gave up, and while this doesn't take exactly like tuna salad, it's close enough that I don't miss the real thing any more.

Couscous
Couscous is a grain made of semolina commonly eaten in North Africa with vegetables and meat, fish, and/or poultry. This vegetarian version, simple vegetable couscous, is less common, but no less delicious.

Deviled Tofu
This delicious, low carb deviled tofu can be spread on celery or bread, or served atop a green salad.

Fajitas
Everyone seems to love "build it yourself" meals, and fajitas are a delicious way to do this. Hot fillings and cold toppings are served with tortillas so that you can mix and match your own fajitas.

French Onion Soup
Traditional French onion soup is made with beef broth, but this vegetarian version is so flavorful that meat-eaters will never know the difference!

Gazpacho
This cold, raw soup is full of flavor.

Grilled Cheese Sandwich
A grilled cheese sandwich, sometimes called toasted cheese, is one of the simplest and yet tastiest dishes around. There's something about melty, gooey cheese on toast that really hits the spot.

Hearts of Palm Dip
This creamy dip made with hearts of palm and green onion will remind you of sour cream and onion potato chips.

Home Fries
Home fries take a bit of time, but they make a great addition to breakfast or brunch.

"Meat" Loaf

Miso soup, or miso shiru, is a typical Japanese soup that comes in many varieties. This one is spiced up with pumpkin, onion, and optional curry powder.

Moussaka
Moussaka is a Greek dish traditionally made with lamb or beef. This vegetarian / vegan moussaka recipe uses portobello mushrooms and seitan instead. A rich and delicious main course.

Noodles and Cheese
I don't know where this recipe comes from or if there's a nicer name for it; all I know is that my mother used to make it when I was a kid and it only has 5 ingredients. The buttery, almost smoky onion flavor and the melty cottage cheese are absolutely delicious!

Onion Soup
If you like onions, you'll love this rich vegetarian soup made with six different members of their family: onions, leeks, shallots, garlic, scallions, and chives.

Onion Confit
Onion confit is basically carmelized onions with a couple of additional ingredients. Don't let its simplicity fool you - onion confit is a terrific addition to pizza, pasta, mashed potatoes, and curry.
