Bell peppers add interesting flavor and texture to recipe without the spiciness offered by hot peppers. Here are my favorite recipes featuring bell peppers.
 

"Beef" Bourguignon
Although time-consuming, this is an easy and very delicious recipe for mock beef bourguignon made with either seitan or tempeh.

Bell Pepper Salad
If you like bell peppers, this beautiful salad made of roasted green and red bell peppers from North Africa (Morocco and Tunisia) will be a real treat.

Bell Pepper, Seitan, Onion, Bell Wraps
Wraps are the fun version of sandwiches. Just heat up a tortilla, add some filling, and enjoy. This seitan, onion, bell pepper, and cheese filling makes a hearty vegetarian wrap.

Bell Pepper Soup
A delicious, colorful soup that can be served hot or cold.

Biryani
This hearty vegetable and rice casserole is from India.

Black Bean Burgers
These black bean veggie burgers from Jamaica are spicy and delicious.

Black Bean Soup
This spicy, garlicky black bean soup is hearty enough to stick to your ribs!

Couscous Salad
A mix of Israeli couscous, lentils, bell peppers, dates, and mint makes a subtle, refreshing salad.

Crêpes
Crêpes are thin pancakes that can be wrapped around just about anything to turn it into an elegant meal, or just folded and topped with something yummy. Try some of these fillings and toppings, or experiment to invent your own.

Crudités
A platter of crudités typically consists one or more types of raw vegetables served with one or more dips. These can be served as an appetizer, at a buffet, in place of a salad - the sky is the limit. Here are some ideas for interesting crudité platters.

Curry
Curry is one of those dishes that can be made with just about any combination of vegetables - use this vegetable curry recipe as a guide.

Fajitas
Everyone seems to love "build it yourself" meals, and fajitas are a delicious way to do this. Hot fillings and cold toppings are served with tortillas so that you can mix and match your own fajitas.

Gallo Pinto
Gallo pinto, literally "spotted rooster," is ubiquitous in Costa Rica (and apparently all of Central America). It refers to black beans and rice cooked together, which are served at every meal, surrounded by various side dishes. It's easy to make and very healthy.

Gazpacho
This cold, raw soup is full of flavor.

Grilled Vegetable Gratin
This hearty dish is made with pasta and grilled vegetables and topped with melted cheese.

Israeli Salad
A mixture of finely diced vegetables served with a tart dressing.

Jambalaya
This traditional stew from New Orleans is meat-based, but this vegetarian version leaves nothing to be desired.

Maki Rolls
Maki rolls are a vegetarian relative of sushi. This recipe calls for cucumber and avocado, but you can experiment with other ingredients as well.

Mushroom Barley Stew
Mushrooms, barley, veggies, and chick peas make a hearty and healthy stew.

Panzanella
Panzanella is a bread and vegetable salad from Tuscany. It's a pretty flexible recipe, as long as you have the two most important ingredients: very ripe tomatoes and day-old, good country bread.

Pizza
Making homemade pizza is one of the best and most creative ways of proving that meat is not a necessary part of a human's diet.

Portobello Mushroom Sandwich, Grilled
In terms of texture, portobello mushrooms are probably the closest vegetarian alternative to steak. While you won't be able to fool meat eaters with a grilled portobello mushroom sandwich, you might convince them that a great meal doesn't necessarily have to include meat.

Pot Pie
This pot pie recipe is better than the TV dinner version for two reasons: it's vegetarian and it's prepared and baked, rather than frozen and microwaved. It's also quick and flexible, so give it a try.

Quinoa
Quinoa, a seed that is used like a grain, is a complete protein, has more calcium than milk, and is both delicious and easy to prepare.

Ratatouille
The perfect recipe to enjoy fresh summer vegetables and herbs; it can be served half a dozen different ways.

Rice Salad
This is a very simple but lovely dish. Kids will especially like making their own salad by picking their favorite items.

Roasted Corn Soup
A great way to enjoy corn - this roasted corn soup is rich and spicy.

Roasted Peppers
These peppers are tasty plain or with rice, bread, or pasta.

Roasted Red Pepper Dip
The first time I tasted this roasted red pepper dip, it was so good that I actually gasped.

Roasted Veggie Sandwich
A roasted veggie sandwich may sound simple (i.e., boring), but since roasting vegetables brings out so much flavor, even non-vegetarians will be delighted.

Salade niçoise
Chickpeas or tofu can be used in place of the traditional tuna fish or anchovies for this vegetarian salade niçoise recipe.

Shepherd's Pie
This vegetarian shepherd's pie recipe is a simple yet delicious lambless version of the real thing.

Stir-Fry
If you're looking for an easy way to make up a healthy meal out of leftover vegetables, a vegetarian stir-fry is the way to go.

Stuffed Peppers
Serve these bell peppers stuffed with tomatoes, carrots, mushrooms, and couscous alongside green salad for a simple, filling meal.

Sweet Potato and Corn Soup
