This interesting chocolate pudding cake has numerous good points: it's low in fat, potentially vegan, easy to make with kids, and delicious too.

Chocolate Zucchini Cake
I have no idea why zucchini and chocolate go well together, but they do, especially in this easy cake.

Chop Suey
Chop suey, despite its Chinese name, is actually an American recipe, normally made with a mix of meat, vegetables, and bean sprouts. This vegan version uses tofu, bok choy, and spinach, to great effect.

Chowder, Ocean
This is a rich and delicious vegetarian alternative to New England clam chowder.

Chow Mein
Mock chicken chow mein (made with TVP) doesn't take long to prepare, but it does require quite a bit of cooking.

Christmas
Whatever is served at a traditional Christmas dinner, meat probably holds pride of place, and what good is that to us veggies? Here are some ideas to mix and match for a vegetarian Christmas menu.

Classic Vegetarian Recipes

A mix of Israeli couscous, lentils, bell peppers, dates, and mint makes a subtle, refreshing salad.

"Crab" Cakes
Delectable "crab" cakes made with tempeh and served with sherry sauce.

Cranberries, Red Cabbage with
A sweet-and-sour side dish that will brighten your table at Thanksgiving or any time of the year.

Cranberry-Nut Bread
A sweet-tart bread that is equally good for dessert, tea, or breakfast.

Cranberry Sauce
What would Thanksgiving dinner be without this sweet-tart, jelly-like sauce?

Cranberry and Wild Rice Soup
An elegant soup made of wild rice and cranberries laced with sherry.

Cream Cheese, Vegan
This tofu cream cheese recipe is perfect on bagels, sandwiches, or anything else that needs a creamy, mildly sweet spread.

A lovely green soup packed with vitamins and flavor.

Crudités
A platter of crudités typically consists one or more types of raw vegetables served with one or more dips. These can be served as an appetizer, at a buffet, in place of a salad - the sky is the limit. Here are some ideas for interesting crudité platters.

Cucumber Dip/Sauce - Tzatziki
A quick, simple, and very refreshing dip or sandwich topping.

Cucumber Salad
Simple and refreshing, cucumber salad is the epitome of summer. Different herbs can make it seem like a completely different salad, so don't be scared to experiment.

This chilled soup is delicious on a hot summer day.

Curry Burgers
